TAMPA (WFLA) – We’re checking in with the Dessert Diva for a simple and sweet Mother’s Day treat.

  • 4 cups assorted berries ( I used raspberries, blueberries and strawberries)
  • 2 tbls granulated sugar
  •  1 cup heavy whipping cream
  • 2-3 tbls confectioners sugar
  • ½ tsp almond extract ( can use vanilla if prefer)
  • Pinch of salt

 
Garnish of your choice- biscotti cookies, shortbread cookies, chopped almonds, chocolate chips, mint 
 
Cut up strawberries, and toss with blueberries and raspberries ( to equal approx. 4 cups ) 
Add sugar over berries.  Stir, and let sit about 15-20 minutes. You can mash up a few berries, and leave some whole for texture if you like. I usually mash about ½ cup of berries, then mix with the whole berries. 
 
While berries are sitting, grab a large cold bowl. 
Beat whipping cream, sugar, almond extract and salt until stiff peaks form. 
 
Use your favorite medium or large glasses to make parfaits in. You can also use a wine or martini glass for a pretty presentation. 
 
Divide the whipping cream and berries between your glasses, starting with a scoop of berries in the bottom, a layer of whipped cream, another scoop of berries and top with a generous dollop of whipped cream. Top with a berry, and your garnish of choice, if desired. ENJOY!
 
NOTE- you can make 4-6 bigger ones, and using smaller glasses, you can get 8. You can really use any cute thing you have around, but best when it is clear,  so you can see the layers.
