Ingredients:

2 tablespoons taco seasoning

1 teaspoon smoked paprika

1 lb pork tenderloin

2 tablespoons olive oil, divided

2 medium tart apples

1 orange

1 small jalapeño pepper

2 tablespoons fresh cilantro, finely chopped

1/4 cup presliced green onions

2 tablespoons apple cider vinegar

1/4 teaspoon kosher salt

1/4 teaspoon pepper

1 (8.8-oz) pouch precooked brown rice

Steps:

1. Combine taco seasoning with paprika. Place pork in shallow dish. Coat with 1 tablespoon oil and sprinkle evenly with seasoning mixture (wash hands). Let stand 30 minutes to marinate.

2. Preheat grill (or grill pan) on medium. Spiralize apples (2 cups). Zest orange (1 teaspoon); remove orange segments and squeeze remaining membrane for juice (2 teaspoons). Slice jalapeño thinly (removing membrane and seeds if desired); chop cilantro.

3. Place apples, zest, juice, orange segments, jalapeño, cilantro, onions, vinegar, salt, pepper, and remaining 1 tablespoon olive oil in a bowl. Gently stir (fold) until blended.

4. Place pork on grill; grill 10-12 minutes turning often or until grill-marked and 145°F. Let stand 5 minutes to rest before slicing. Prepare rice following microwave package instructions. Serve pork over rice with slaw.
