Manti is a bite-sized pocket of traditional deliciousness!  I am so excited to share this family recipe with you. Armenians traditionally serve this as a soup.  Enjoy Manti as a two-bite appetizer served with garlic yogurt. Baking them first makes the edges crunchy.  You will be amazed how much flavor is in every bite!

INGREDIENTS

1 bunch parsley chopped (garnish)

1 tomato chopped (garnish)

Wonton wrappers

BEEF / LAMB FILLING

1 lb ground beef

½ lb ground lamb

ê(INGREDIENTS BELOW CAN BE COMBINED IN PROCESSOR FIRST) ê

1 C chopped parsley

1 bunch scallions (chopped, 6)

1 small/medium onion (minced)

1 tsp salt

1 tsp black pepper

½ tsp cumin

½ tsp tsp red pepper flakes

¼ C oil

*combine all ingredients, bag and chill 1-2 hours

TURKEY FILLING

1 ½ lbs ground turkey

ê(INGREDIENTS BELOW CAN BE COMBINED IN PROCESSOR FIRST) ê

1 C chopped parsley

1 bunch scallions (chopped, 6)

1 small/medium onion (minced)

1 tsp white pepper

½ tsp salt

½ tsp cumin

¼ C oil

*combine all ingredients, bag and chill 1-2 hours

GARLIC YOGURT

2 C plain yogurt

1 Tbsp garlic (minced)

½ tsp corriander

¼ tsp salt and white pepper or to taste

¼ C chopped parsley

*combine all, set aside/chill until service

BROTH

4 C beef broth

2 Tbsp tomato paste

Chopped parsley, tomatoes (add what you like, if any)

DIRECTIONS

Keep wonton wrappers covered with damp paper towel during process to avoid drying outKRIS

Cut wonton in 4 equal squares

Place marble size amount of choice filling in center of wonton square

Water edge to seal manti

Create miniature canoes with meat filling showing

Place pastries side by side in buttered baking dish

Brush with melted butter

Bake in oven 425 degrees for 40 minutes

Pour hot broth over pastry & return to oven for 10-15 minutes more (until most stock is absorbed)

Serve manti in shallow bowl / add broth

Top with spoonful of garlic yogurt

Sprinkle with chopped tomatoes and parsley
