Three ways to make your salad more tasty and unique:  a Parmesan Bowl, a Parmesan Fan, and a Parmesan Collar.  These great ideas are from Chef Robert Masson from 717 South Restaurant in Tampa.

This is the basic recipe for the Bowl.  In order to make the Fan, just the Parmesan “pancake” in half, and fold in a fan-like manner and prop into your salad bowl.  To make the Collar, just cut in wide strips and wrap around some long whole Romaine leaves and wrap it around, drizzle Caeser’s dressing on it, and voila!

Method

Using a non stick pan, sprinkle Parmesan cheese evenly across the surface of a preheated pan on medium high heat. Lightly brown on one side then flip it over lightly browned on the other side. Very quickly remove from pan and place on your mold shaping it before it cools. All stoves are not created equal so you may have to play with the temperature a little bit. Once you get the hang of it you can play around with it and make many different shapes. Have fun!
